Chinese Vegetable Rice


Ingredients:
sonamasoori rice - 2cups(cook & keep aside
broccoli - 1lb
baby carrots - 4
cooked green peas - 1/2cup
scrambled egg with 5 eggs (optional)
scallion(green onion) - 1bunch
bell pepper - 1/2
soya sauce - 11/2tsp
venigar - 1tsp
salt - 11/2tsp
tabasco pepper sauce - 1/4tsp
grated ginger - 1/2tsp
lime juice - 3tsp
oil - 3tbsp
roasted sliced almonds - 1/2 cup(optional)
Method:
1) To prepare broccoli, break off the flowerets and then split them into either halves or quarters. Discard any leaves. Peel and slice the stems along the diagonal. Wash and thoroughly drain the sliced broccoli.

2) Cut carrots, bell pepper in very thin lengthwise (strips). Chop scallion finely.

3) Heat 11/2tbsp oil in a wok (stir fry pan). Add carrots, broccoli, bell pepper. Stir for 5 min in a medium heat and remove the vegetables from pan. It should be crispy.

4) Now turn on the heat in very low and add remaining oil to the pan, add ginger, cooked rice, venigar, soya sauce, tobasco sauce, salt, green onion, green peas. Stir it well for 2-3 min.

5) If you want you can add almonds, scrambled egg & mix it well.

Remove from heat. Add lime juice to it and stir it. Serve hot
